Why These Stand Out

Ingredients
Chocolate Ganache
- 250g premium dark chocolate (65-70% cacao), finely chopped
- 160ml heavy cream
- 1/2 teaspoon ground cardamom
- 1 tablespoon honey
- Pinch of flaky sea salt
Pistachio Centers
- 60g pistachio cream or pistachio butter
- 1 tablespoon powdered sugar
Coatings (choose one or mix)
- 100g crushed toasted kunafa
- 50g finely chopped pistachios
- Cocoa powder for dusting
- Melted white chocolate for drizzling
Instructions
Step 1: Make the Ganache (10 minutes + chill)
- Place chopped chocolate in a heatproof bowl
- Heat cream with cardamom and honey until just simmering
- Pour hot cream over chocolate, let sit 2 minutes
- Stir from the center outward until smooth and glossy
- Add sea salt and stir
- Cover with plastic wrap touching the surface
- Refrigerate 2-3 hours until firm enough to scoop
Step 2: Prepare Pistachio Centers (5 minutes)
- Mix pistachio cream with powdered sugar
- Roll into tiny balls (about 1/2 teaspoon each)
- Freeze for 15 minutes
Step 3: Form Truffles (20 minutes)
- Using a melon baller or teaspoon, scoop ganache portions
- Flatten each scoop in your palm
- Place a frozen pistachio ball in the center
- Roll ganache around the pistachio center
- Roll between your palms to form smooth balls
- Work quickly — the warmth of your hands will soften the ganache
Step 4: Coat and Finish
- Roll truffles in your chosen coating immediately after forming
- For kunafa coating: roll in crushed toasted kunafa, pressing gently
- For pistachio coating: roll in finely chopped pistachios
- For classic: dust with cocoa powder
- For fancy: dip in white chocolate, then sprinkle with pistachio dust
- Refrigerate on a parchment-lined tray for 30 minutes to set
Storage and Gifting
- Fridge: Up to 2 weeks in an airtight container
- Freezer: Up to 2 months (thaw in fridge overnight)
- Gift boxes: Layer between parchment paper in decorative boxes
